𖦁 the ingredients:
every single ingredient here plays its part in creating that signature churro flavor with a gooey nutella twist.
nutella: freeze this ahead of time so you can stuff each cookie with a rich, melty center that doesn’t spill out while baking. trust me, this is the heart of the cookie.
granulated sugar + cinnamon: these two team up to make the churro coating. after baking, your cookies will have that warm, cinnamon-kissed crunch on the outside.
butter: unsalted butter gives you more control over the cookie’s flavor. make sure it’s room temp so it creams perfectly with the sugars.
light brown sugar: this adds depth and that soft, chewy texture we all love.
eggs: at room temperature, they help everything bind and give the dough its structure.
vanilla extract: a splash of this adds warmth and enhances the churro vibe.
flour: the base of our cookie dough. it helps keep the cookies thick and soft.
cornstarch: a little secret ingredient for that melt-in-your-mouth softness.
cinnamon: because what’s a churro without cinnamon?
baking soda + baking powder: both work together to give lift and that signature crumbl-style puff.
salt: just a bit balances out the sweetness and makes all the flavors pop.
𖦁 how to make churro nutella crumbl cookies:
get ready for your kitchen to smell like a churro cart in the best way possible. these are fun to make, super impressive, and sooo worth the steps.
step 1: freeze the nutella
scoop out 1 tbsp portions of nutella onto a lined tray. pop them into the freezer for 30 minutes. they need to be firm to stuff into the cookie dough later!
step 2: make the cinnamon sugar
in a small bowl, mix together 1/4 cup granulated sugar and 2 tsp cinnamon. set aside – you’ll roll your cookie dough in this before baking for that classic churro finish.
step 3: make the dough
in a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy – about 2 minutes.
add in the eggs and vanilla extract, mixing until everything is smooth and glossy.
step 4: combine the dry ingredients
in another bowl, sift together the flour, cornstarch, cinnamon, baking soda, baking powder, and salt.
gradually fold the dry ingredients into the wet mixture until a soft, thick dough forms. don’t overmix!
step 5: stuff & shape the cookies
scoop 1/4 cup of dough and roll it into a ball. flatten slightly with your palms.
make a little indent in the center, place a frozen nutella scoop in it, and gently wrap the dough around it to seal.
roll the sealed dough ball in the cinnamon sugar mixture until it’s fully coated in that churro sparkle.
step 6: bake to golden perfection
place the dough balls on a lined baking sheet (leave space – these are thick cookies!). gently press down just a bit.
bake at 350°f for about 15 minutes, or until the edges are golden and the centers look puffed and set.
𖦁 tips for the best churro cookies:
freeze the nutella properly: it should be firm to avoid leaking out during baking.
coat the cookies well: roll the dough generously in the cinnamon sugar to really lock in that churro look and flavor.
don’t overbake: they should be soft in the center when you take them out – they’ll set more as they cool.
serve warm: that melty nutella center hits different when the cookies are still warm.
